Healthy, Hearty Meal Alternative

Let me know what you think of the following recipe:

Healthy, Hearty Dinner Alternative:

Sauté:

Carrots
Onions
Celery
Fresh mushrooms
Garlic
Herbs?
Any other vegetables

Stir in cubes of tofu and green/red/yellow/orange peppers.

Add:

Salsa, spices and tomato sauce to taste.
Pre cooked lentils and or black beans

Serve concoction over brown / wild rice. Top with grated cheese.


Note: I tasted my SOWER neighbor’s meal and I simplified her recipe. (She makes stuffed peppers from the ingredients. I’m trying to fine meatless meals that are hearty enuf for Al to eat and enjoy! He’s a meat and potatoes kind of guy!

I'll try it! Thanks! That's pretty much what I make, but I never add salsa or tomato sauce. Or cooked carrots cause Steph don't like 'em that way. And the cheese sounds weird, but everyone likes cheese (except Chinese people).

My colan hasn't repaired since my diverticulitis attack in January. I have talked with several natural health food nutritionist type people. It is very confusing. They all have a different line and to read their stuff is more that I want to research.

However, I am willing to eat raw veggies and fruit for a while and delete the sugar and see what difference it makes.

I want to buy a juicer, but the recommended one costs $5oo bucks. the SOWER we breakfasted with made me a carrot, celery drink and I liked it, but not enuf to invest that kind of cash, and then, only use it once in a while. Plus, where would I store it?

So, my compromise is to be semi-vegetarian for a while.

What do you think?

i think if it makes you feel good, than, go for it!!
modifying your diet seems to be one of the few things that you can actually do and control about your health to make a difference in how you feel. (does that make sense?)
oh- hey!!!
adam- i nearly fell over after reading your bit about chinese people not being into cheese!!! crazy. cheese. no cheese. wow. yup- i've never had cheese in my chinese. funny how something can be right under your nose, and you never notice.....
