Al's Journal

May 26, 2007 It’s Saturday and we finished our project assignment a week ago last Thursday. Since our next assignment doesn’t begin until June 4 right here at Glen Eyrie, we have two weeks for fun. However, so far we have spent most of our time with medical appointments of one sort or another. Anitarae’s new glasses were not working out so she had to have another exam. It turns out the exam she had in Mississippi resulted in a wrong prescription so she has to have new lenses made. Then she had to have blood work done at the hospital to determine the cause of her digestive tract problems. I finally got in to see an ENT doctor about my sinus problem, which according to him is not a sinus problem. Two dentists told me it was and now he was sending me back to a dentist. The third dentist sent me to an endodontist for a root canal to be followed by a crown back in his office. Perhaps it was the estimated cost of $2500 that raised my blood pressure, but at any rate they wouldn’t do ...

H-E-L-P!

Trouble! WE HAVE MICE! ! ! (I gave the mouse a cookie but NOW he wants a glass of milk!) Forty one years we've been married! This is a first! Oh, we've had our share of ANT, but NEVER MICE! Three days in a row. We are on a rampage! (They are country mouses.) I am a city girl! H-E-L-P!

New Recipe

Should you healthy eaters want a new Oriental Recipe, this was good. Bon Apatite! Marinated Tofu – 2 Tbsp. Oil 1 lb. Firm Tofu, cubed 2 cloves of Garlic, chopped pepper 1 tsp. Dill Weed Pinch of Cayenne Pepper 1 tsp. Dark Sesame Oil (Or more, to taste.) 2 tsp. Kikuman Soy Sauce (Or more, to taste.) 1. Fry Tofu in hot oil. Stir frequently. 2. Add garlic, pepper, dill and cayenne. 3. Add Sesame Oil and Soy Sauce. Stir in and turn off heat. Which reminds me of Kikuko's Easy Tofu Salad: Place soft tofu on plate. Top with Sliced Green Onion Drizzle Soy Sauce over Green Onion

Red River

When I was seven or eight or nine or ten or eleven Grandpa Tyner gave us a video tape of some cowboy movies. One of those movies was Red River , starring John Wayne. I watched and enjoyed the entire movie with delight . . . up until the exciting conclusion where the John Wayne character was going to duel his own son over a dispute with a heard of cattle. But then the tape ended and I was deeply crushed to not know how the movie ended. It was one of those things that stayed with me for a long time. For years (literally) I wished that I could just see the ending on TV sometime, but that opportunity never came, and the sense of loss eventually faded. Then on Saturday, as Alex and I sat eating our breakfast and watching a cooking show on PBS, they announced that they would be showing Red River that night. Wow! Al's Journal ... 5/14/07

May 14, 2007 Anitarae says she has rarely seen such big smiles on me as she did this past weekend. Well, I’m 64 years old and I’ve known about skiing in places like Breckenridge, Vail and Aspen since I was 16, but ever seeing these mountains has only been a wish. Ever skiing them would only fit in the category of dreams. Friday and Saturday the wish came true the dreams became a plan with hope. Since arriving in Colorado this May, I’ve been hoping to take a ride into the mountains to see the major ski areas I’ve thought about over the past many, many years. The weather promised to be beautiful so we rented a Camry, because we wanted comfort and economy, and headed out Rt. 24 on an adventure. I knew the scenery would be nice, but it surpassed my expectations. Seeing the snow covered mountains in the distance was beautiful and then driving through those areas that were covered with snow was a delight. The Perfect Day! May 11, 2007

Today we had a nearly perfect holiday! We decided to take a vacation adventure! We rented a little Camry, and took a rode trip. We prayed before we left and dedicated the day to the Lord and asked for His guidance, blessing, leadership, and asked that we might be a blessing. Then we meandered thru the Rocky Mountains and have visited Breckenridge, Vale and tomorrow we will visit Aspen. All of these are Ski Resorts that Dad has always just dreamed of seeing! We had a wonderful day siteseeing, shopping, dining and now we have a little suite at the Comfort Inn. We were enabled to get this room because of a man we "coincidentally" (a God thing...) met and he advised us where to go and made the reservations for us and got us a good deal! PTL! Your dad has been grinning like the cheshire cat all day! He has been borderline giddy! THAT in itself has been one of the high points of the day for me... We have had gorgeous weather and so much fun and beauty today. It's ha...

Adam's Day

I got an email last week from Adam and this was in it. I thought we all should be able to see a snapshot of Adam's day, so I post it now: Snapshots from my day ---- Bike riding to work, downhill, fun Eating instant Grits at work. DELICIOUS. Eating lunch with Adam C, Chris Lee and Matt Blaney, all stand up guys. Working fast and hard at my desk is pretty fun, but when I get lazy I simply do not want to move and click the mouse Riding home after work, uphill, drudge, just want to be home There you go! Oh and also one guy in the office has been bringing in RockStar energy drinks for everyone for the last couple days and everyone is wired and spazzy. It's funny. A diversion. (Anybody else want to post a snap shot?) Okay, I will. Up at 7. Devotions with SOWERS at 7:30 (A neat young woman shared her story with us old guys.) 8 am ish go to work in the Marketing Division of Navigator's Glen Eyrie. When we were in Dallas we took Andrew and his wife, Margaret and their daughter Riley out to dinner. We had a great time getting to know them better, not to mention the food was really good.

Al's Journal ... 5/4/07

Dear Family, This journal entry is about Colorado and I am frustrated because I can't describe it in a way that does it justice. This is a beautiful place and we are really enjoying life here. We miss you all and I keep wishing you could experience this kind of life. I know it's because of God's blessing and I hope you will draw close enough to Him to benefit, also. I love you. Friday, May 04, 2007 Our first week at Glen Eyrie is nearing an end. It has gone quickly as all good times do. We are very happy here for many reasons. Actually, we feel blessed to be here in this beautiful place. Colorado, especially this area of Colorado Springs, offers an eye feast in almost every direction. Glen Eyrie is adjacent to Garden of the Gods and the rock formations are awesome. I was blown away by the beauty of the snow covered mountains and blue skies when we arrived and I’m still stunned by it every day. I keep saying stuff like, “I can’t believe how beautiful this place is....

Healthy, Hearty Meal Alternative

Let me know what you think of the following recipe: Healthy, Hearty Dinner Alternative: Sauté: Carrots Onions Celery Fresh mushrooms Garlic Herbs? Any other vegetables Stir in cubes of tofu and green/red/yellow/orange peppers. Add: Salsa, spices and tomato sauce to taste. Pre cooked lentils and or black beans Serve concoction over brown / wild rice. Top with grated cheese. Note: I tasted my SOWER neighbor’s meal and I simplified her recipe. (She makes stuffed peppers from the ingredients. I’m trying to fine meatless meals that are hearty enuf for Al to eat and enjoy! He’s a meat and potatoes kind of guy!
